RAW MINI BLUEBERRIE CARDAMON RAW CHEESCAKES

Raw dessert is something I have recently been tampering in. Almost all raw recipes work for Paleo too. If need be simple alterations can be made to make it Paleo. I loved making these! Perfect to bring to a party and so cute! They flavour was amazing and is super unique. You can try making other types of Raw cheese cakes this way too. A bonus to making raw food is no cooking is required!





INGREDIENTS:

CRUST:
1 cup almond flour
2/3 cup pitted dates

FILLING:
3 cups blueberries ( you can use frozen too)
1 1/2 cup cashews
1/2 cup Organic maple syrup
2 TBS lemon juice
1 -TSP cardamon
1/2 TSP Pure vanilla extract
Pinch of salt
3 TBS melted cacao butter

DIRECTIONS:

- In a food processor grind almond meal and dates together (add 1 TSP of water to the mix if its too crumbly)
-Press the crust into silicone cups or ceramic ramekins ( don't use paper cupcake holders because it will stick) Set aside
- In a blender combine all but the melter cacao butter. Blend until Smooth
- Add the butter and blend again
- Pour the blended mixture over the crusts
- Chill in the freezer until firm
- Garnish with blueberries, raspberries, or seasonal edible flowers :)
