BASIL PESTO CHICKEN OVER BABY SPINACH W/ TOMATOES AND AVOCADOS

This week I have gone pesto crazy! I have been trying all sorts of new things with the pesto I recently made :) You can't go wrong with pesto & chicken together.



INGREDIENTS:

- 1 TBS olive oil
- 1 Chicken breast
- 2 cups baby spinach
- 1/2 avocado
- 1 vine ripened tomato
- 1 TBS basil pesto
- 1 TBS hemp hearts
- 1 TBS Citrus garlic aioli

DIRECTIONS:

- Preheat oven 375 Degrees F
- cover glass baking dish with olive oil
- Cut chicken breast into cubes and toss in basil pesto, place in the baking dish and bake for 30 min
- In a large salad bowl add spinach avocado and tomato
- Add cooked chicken and hemp hearts
- Toss everything with citrus garlic aioli sauce and enjoy ~
